經過多年嘅改良,最後得出呢個咁簡單嘅食譜!

步驟
麵粉和自發粉過篩。
Sieve Flour, S.R Flour into mixing bowl.
將一半糖加入蛋白打勻。 將另一半糖加入蛋黃打勻。
Slowly mix in half of the sugar into the egg white and beat until mixed well. Slowly mix in half of the sugar into the egg yolk and beat until mixed well.
將牛奶加進麵粉和自發粉,在大碗裡攪勻。
Add in milk into flour and S.R. flour and mix well
加入蛋黃漿,切拌均勻。
Add in Egg Yolk with sugar mixture into mixing bowl and fold well.
將打好的蛋白慢慢加入大碗,切拌均勻至杰身鬆軟。
Fold in Egg white with sugar mixture into mixing bowl bit by bit and fold well until consistency is thick and runny.
將粉漿過篩,濾掉顆粒。
Get a strainer and put mixture through to get rid of the lumps and bumps
慢火加熱平底鑊,放進少許牛油,並讓牛油均勻薄薄地塗在平底鑊上。
Heat pan on low heat and get butter and gently run over the surface to leave a thin layer of butter on the pan.
用杓子倒少許粉漿進平底鑊,煎香兩面。(通常第一塊熱香餅都不太漂亮)
Using a ladle pour in a little (first pancake is usually ugly) and cook both sides
