Strawberry Cheese Cake
I was watching the show "Young Masterchef Australia" and in one of the events they were making mango cheese cake. Once I knew how simple the ingredients are, I just had to attempt this myself! I had quite a workout making this. There's a right tool for every job and I definitely did not have the right tools. If you have a food processor (lucky you) use it!

步驟
  • Note: If you have a food processor, use it!
    Crush up 3 digestive biscuits into fine powder.

    Or throw the biscuits into a food processor and obliterate it.
  • Pour melted butter into the biscuit powder and mix evenly.

    I did the mistake of mixing the biscuit powder with unmelted butter. This took me a lot longer to get the two to mix evenly.
  • Split the biscuit mixture evenly into molds.
    I used 6 small silicon molds.

    Press firmly on the biscuit mixture with a spoon to compress it into a solid base.
  • Bake for 5 minutes at 180 degrees.

    Do not bake for over 5 minutes. The base will easily turn to charcoal, so have a kitchen timer ready! This was in fact my second batch since I was spending my sweet time taking pictures of all the steps and ingredients. Before I knew it, black smoke was coming out of my oven!
  • Mix together the cream cheese, Jam (or puree) and sugar together.
    If you have a food processor, use it to get a smoother texture.
  • Mix a teaspoon of gelatin into 15 ml of water. Microwave for 15 seconds and continue mixing until gelatin is fully dissolved.

    Allow this mixture to sit for 3-5 minutes.
  • Add in cream to the mixture and mix well.
  • Add in the gelatin mixture and mix well again.
  • Evenly distribute the mixture into the mold.
  • (Optional) Spread some biscuit powder evenly across the surface.
  • Refrigerate for at least 6 hours. Done!

    Once refrigerated, the texture should be firm enough for you to 'pop' the cheese cake out of the mode. If you are using a silicon mode, you can slowly turn the mold inside out to push out the cake. If you are using a tin mold with a removable bottom, even better!

    Or if you don't care about presentation, just eat it straight out of the mold.
