Matcha (or Green Tea) is a renowned for its rich content of antioxidants and often in japanese matcha desserts it is complimented with red beans or chestnuts. HEAVENLY combination. This time, we are making Matcha Green Tea Swiss Roll to settle our crave for not-so-guilty-pleasure. The measurements of ingredients and time are pretty random actually. We tend to depend on our eyeballs and simply improvise. Just keep this in mind--- never freak yourself out and enjoy this baking experience.

步驟
  • Boil the dried red beans for a good 45 mins. While boiling, start preparing for the ingredients and the batter.
  • After measuring the ingredients, lightly mix the matcha powder and flour together.
  • Sift the mixture for a couple of times to make the powder fine and the cake light and fluffy
  • Now we're gonna make the batter. Using an electronic mixer, beat 4 egg whites in a bowl. When the egg whites get foamy, add 20g sugar into it and beat it again. After 10 seconds of beating, add another 20g of sugar in it and beat it again. Beat until the meringue reaches a stiff peak stage.
  • Remove the meringue from the beater and proceed to lightly beat the 4 egg yolks in a separate bowl. After 5 seconds, add 40g of sugar into it and continue beating until it's thick and creamy.
  • Pour the matcha flour mixture into the egg yolk paste. Use a whisk to mix them until the flour is completely moistened.
  • Pour 1/3 of the meringue (egg white foam) into the paste you've made in the previous stage. Lift the mixture with the whisk, tap it on to the edge of the bowl and drop it into the bowl. Repeat to mix the paste thoroughly.
  • Doing the same, Add the rest of the meringue into the batter in two steps. Try not to break the foam. Repeat the mixing movement for 100 times until the batter gets smooth and glossy.
  • Pour the batter onto the baking sheet. Gently spread it evenly. Remember NOT to break the foam.
  • Gentle drop (or tap) the baking tray onto the table to break the bubbles in the batter.
  • BAKING TIME! Place it into a preheated oven at 340 F or 170 C for about 25 mins.
  • When 12 mins passed, rotate the baking tray 180 degrees, reversing the left and right side, to make sure the cake is evenly baked
  • Take the tray out from the oven and drop it on a table for a few times to make the sponge cake fluffy. Then, remove the baked sponge cake with the baking sheet from the tray and let it cool down for 10 minutes.
  • Making the filling: pick red bean or chestnuts according to your preference. Grind the red beans into a paste or chop the chestnuts into bits. Mix them into the whipping cream prepared.
  • Spread the redbean/ chestnut cream onto the cooled sponge cake.
  • ROLL IT UP! Fridge it and wait for two hours. (I fridged for a night and it was all fine too!)
  • Unwrap the cake roll and slice them!
