Adapt from hummingbird chocolate cupcake recipe, make 6 cupcakes. Nothing new but hope you will find it useful.

步驟
  • Preheat the oven to 170C. line a muffin tin with paper cases.
  • Sift together flour ,cocoa powder,sugar,baking powder and salt
  • Beat the butter until soft, Add in milk,egg,and vanilla extract, whisk on low speed until everything is combined.
  • Slowly pour them into the flour mixture, beat to combine with high speed (scrape the unmixed ingredients from the side of the bowl).
  • Continue mixing for a couple more minutes until the mixture is smooth, don’t over mix.
  • Spoon the mixture into the paper cases until two-thirds full and bake for 20-25 minutes, until the sponge bounces back when touched. Test with a skewer, insert in the center should come out clean.
  • Leave the cupcakes in the tray before turning out onto a wire cooling rack to cool completely.
  • while baking the cupcakes, prepare the icing.
  • Sift the icing sugar and cocoa powder. Beat the butter, icing sugar and cocoa powder with electric whisk, on medium speed until the mixture comes together and well mixed.
  • add milk to the butter mixture,turn the mixer down to low speed. When the milk is incorporated, turn the mixer up to high speed. Continue beating until the frosting is light and fluffy, about 3-5mins.
  • when the cupcakes are cooled,spread the frosting on with a pallet knife , or squeeze in with a piping bag and decorate.
  • eat one or two, and go work out
