香草醬意粉 Pasta with Pesto Sauce

步驟
  • 以中低溫用平底鍋烤香松子和蒜頭,不斷攪動直至它們轉金啡色並發出香味。然後放到一邊待涼。
    把蒜頭去皮,切碎。

    Toast pine nuts and garlic over medium-low heat over a skillet. Stirring frequently until it turns golden brown and fragrant. Set aside to cool down. Peel garlic and chop coarsely.
  • 在大鍋裡煲滾12杯水。加進薯仔和一湯匙鹽,煮至軟身但仍保持形狀。把薯仔取出,放到一邊待涼。把熱水留下。

    Boil 3 quarts (12 cups) of water to a boil in large pot. Add potatoes in with 1 tablespoon of salt. Cook until tender but still holds it shape. Remove from water, set aside. Keep the water, do not discard.
  • 再用平底鑊,加入1/2杯水,把青豆煮約5分鐘至軟身,瀝乾水分後與薯仔同放。

    Using the skillet again, add 1/2 cup of water and cook your green beans til tender. Around 5 mins. Drain and place with potatoes.
  • 把羅勒、芝士、橄欖油、松子、蒜頭和1/2茶匙鹽以攪拌器打至滑身。

    Add basil, parmesan, EVOO, pine nuts, garlic, 1/2 tsp salt in food processor, blend til smooth.
  • 根據包裝上的指示用煮薯仔的水把意粉煮至彈牙,把水分瀝乾,但把水留下。

    Cook pasta as directed in packaging in the left over potato water, til al dente. Drain in colander but reserve water in another bowl for later use.
  • 把意粉倒進另一個鍋子,加入薯仔、青豆、香草醬、牛油、檸檬汁和1杯煮薯仔和意粉的水,拌勻至醬汁成忌廉狀,如果太杰身可加入多點意粉水。最後用鹽和胡椒調味。

    Add pasta back in the now empty pot, with potatoes, green beans, pesto, butter, lemon juice and 1 cup of reserved potato/pasta water. Stir around to combine all the liquids together until its nice and creamy. Add more of the reserved water if its too thick. Season with salt and pepper.
